pickled pepper recipe's?

Looking for a hot or cold pack recipe to store in the fridge, not processed.

I just picked a bunch of Hungarian peppers and want to try some pepper rings. I water bathed some last year, and predictably they were too soft. For the little room they will take up in the fridge I would prefer to leave them there.

I would suggest making some hot pepper jelly.

Put that over (or mix) some cream cheese and then put it on some crackers, you won't be disappointed.

I plan on it, if I get some more.
But I likes my pepper rings too!Big Grin

I'm wondering if pickle crisp would help.
Not that I want to add CC to my canned goods.

That doesn't seem like a bad idea.
A little calcium chloride never hurt anyone but I understand why you wouldn't want to add it.

I'll piggyback on this thread instead of making a new one.

On the subject of pickled peppers, anyone have a good recipe for fermented hot sauce?

I've got jalapeños, cayenne, cherry bombs and habañeros coming out of my ears right now and would love to find a use for them! Lol!

The first step in any pickled pepper recipe is to pick a peck of them.

Then, choose a few different steps, like tossing some garlic cloves in, or fresh herbs and such. Some hot picketed peppers with basil, garlic, and cherry tomatoes is magnificent on a hot roast beef with au jus.
